Feeding hungry plant eaters

When you're the only meat-eater facing a room of hungry vegetarians, you learn to think creatively about what you're going to cook for dinner. The first rule of thumb: Open a bottle of wine. This keeps everyone's hands busy and mouths full while you launch into creating the first veggie-only dinner you've ever made in your entire life.

Don't despair! Help is here! Below is a quick and easy solution that will satisfy even the most ravenous and critical of herbavores. And even your meat-loving friends will give you praise.

You're going to cook Tofu Tacos. I know, sounds gross, but tastes great. The first thing to get out of the way is the part you already know: buy taco ingrediants. This includes shells (hard or soft), cheese, onion, salsa, lettuce, sour cream, guacamole or whatever you put on regular tacos made of pigs and cows. Feel free to add in side dishes for a true veggie-mexican extravaganza (blackbeans and spanish rice are my favorites). Prepare all the ingrediants for a make-it-yourself taco bar that your friends will truly love.

Finally, the most important - and most difficult - part: the TOFU. Purchase packages of extra firm tofu (not silken) from your local grocer. One package should feed about four people. Pick up some standard taco seasoning from the spice aisle (one packet per one package of tofu). Open the tofu, drain any water and crumble it up into a non-stick skillet using your hands. This part will be especially gross, because raw tofu feels like brains and you'll need to smash it up between your fingers. Brown the tofu (brains!) as you would hamburger. You can add chopped onions or peppers if you want. Once it's browned, add the taco mix as it states on the packet (usually mixed with water). Once the water is absorbed, the tofu will take on the seasoning and you're ready to serve.

Herbavores and carnivores alike will compliment you on this easy and user-friendly dish. Plus, the leftovers make great breakfast burritos. Enjoy!
